  • 16 ounces 450 grams potato gnocchi
  • 2 tablespoons 30 ml extra virgin olive oil or oil from sun-dried tomatoes
  • 1 pound 450 grams boneless chicken breast, cut into ¾–1 inch chunks
  • 2 cloves garlic finely minced
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian herb mix
  • 2 tablespoons 26 grams unsalted butter
  • 1 cup 240 ml low-sodium chicken broth
  • 1 cup 240 ml heavy cream (double cream in the UK)
  • cup sun-dried tomatoes chopped
  • 2 cups fresh baby spinach leaves
  • 1 teaspoon smoked paprika
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme leaves optional, adds subtle aroma
  • ¼ teaspoon crushed red pepper flakes optional, adds mild warmth

Step 1: Cook the Gnocchi
  1. Start by bringing a large pot of salted water to a boil. Once boiling, add the potato gnocchi. These little dumplings will float to the top when they’re done, usually within 2-3 minutes. Keep an eye on them, and when they float, scoop them out with a slotted spoon and place them aside. Don’t rinse them, as you want that natural starchy goodness for the sauce.
Step 2: Sauté the Chicken
  1. In another large skillet, heat the olive oil over medium heat. Add the chunks of chicken breast and season with salt. Cook for about 5-7 minutes, stirring frequently until the chicken is cooked through and golden brown. It's essential to give it some space; crowded chicken won’t brown well. When you see that lovely golden hue, add the minced garlic. Stir for around 30 seconds until fragrant.
Step 3: Make the Sauce
  1. Once the garlic is aromatic, it's time to create our luscious sauce. Add the butter to the skillet, allowing it to melt, then pour in the chicken broth and heavy cream. Stir to combine. Bring this mixture to a gentle simmer while you keep stirring.
Step 4: Add Flavorful Ingredients
  1. This is where the fun begins! Toss in the sun-dried tomatoes, Parmesan cheese, Italian herb mix, smoked paprika, black pepper, and thyme if you're using it. Mix everything well until the cheeses melt and blend smoothly into the sauce. The aroma will start to fill your kitchen — it’s a good sign.
Step 5: Incorporate Spinach and Gnocchi
  1. Once the sauce reaches a creamy consistency, fold in the spinach leaves and cooked gnocchi. You want the spinach to wilt slightly while letting the gnocchi soak up all that creamy goodness. Stir gently for about 1-2 minutes, being careful not to break the gnocchi.
Step 6: Taste and Adjust
  1. Now comes the most important part: tasting! Grab a spoon and see if you need to add more salt, pepper, or perhaps a pinch of crushed red pepper flakes for extra heat. Adjust according to your preference, as flavors can vary based on ingredients used.
Step 7: Serve and Enjoy
  1. Once you’re happy with the taste, serve the creamy chicken and gnocchi immediately. You can garnish with an extra sprinkle of Parmesan or freshly cracked pepper. And just like that, you've created a dish worthy of a great Italian feast.
