Ingredients
  

  • 2 cups of white distilled vinegar
  • 2 cups of filtered water
  • ¼ cup of organic cane sugar
  • 2 tablespoons of coarse sea salt
  • 4 cloves of garlic sliced in half
  • 12 to 14 Persian cucumbers or 8 to 10 small pickling cucumbers
  • 2 teaspoons of whole mustard seeds
  • 2 teaspoons of whole black peppercorns
  • 1 teaspoon of coriander seeds
  • 1 bay leaf per jar

Method
 

  1. Make sure your jars are completely clean and sterilized. This helps with preservation.
  2. Slice them to your liking. You can make them spears or rounds; either way, ensure they're even to guarantee uniform pickling.
  3. Combine the vinegar, filtered water, sugar, and salt in a medium saucepan. Bring this mixture to a gentle boil. Make sure everything is dissolved.
  4. Place the prepared cucumbers in the jars. Tuck in the garlic, mustard seeds, peppercorns, coriander seeds, bay leaves, and fresh dill sprigs.
  5. Once the brine is hot, pour it over the cucumbers, ensuring they're fully submerged. Leave a little bit of headspace at the top.
  6. Seal the jars tightly. Allow them to cool at room temperature, then transfer them to the refrigerator. This allows the pickles to properly ferment and develop that incredible flavor.
