  • 1 pound ground chicken
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon toasted sesame oil
  • 1 medium or large sweet onion finely diced
  • 3 cloves garlic minced or pressed
  • 1 teaspoon ground ginger
  • 1 tablespoon chili garlic paste or to taste (substitute with sriracha if preferred)
  • 1 tablespoon rice vinegar
  • 2 tablespoons low-sodium tamari or soy sauce
  • cup sweet hoisin sauce
  • 1 tablespoon oyster sauce
  • 1 8-ounce can water chestnuts, drained and finely chopped
  • 2 to 3 green onions thinly sliced
  • ½ teaspoon sea salt adjust to taste
  • ½ teaspoon freshly cracked black pepper
  • 1 teaspoon sesame seeds
  • Butter lettuce leaves for wrapping and serving

Method
 

  1. Start by gathering all your ingredients. Finely chop the onion, garlic, and green onions. Drain and chop the water chestnuts. This ensures everything is ready to go when you begin cooking.
  2. In a large skillet, heat the extra virgin olive oil and toasted sesame oil over medium heat. The combination of these oils imparts a beautiful flavor that’s hard to beat.
  3. Add the diced onion to the skillet. Sauté for about 3-4 minutes until they're translucent. Now, throw in the minced garlic and ground ginger. Cook for an additional minute until fragrant. This step fills your kitchen with delicious smells!
  4. Next, stir in the ground chicken. Cook it until browned. This should take about 5-7 minutes. Use a wooden spoon to break the chicken into smaller pieces.
  5. Once the chicken is cooked, mix in the chili garlic paste, rice vinegar, tamari or soy sauce, hoisin sauce, and oyster sauce. Stir this mixture well to ensure the chicken gets coated with all those fantastic flavors.
  6. It’s time to add the chopped water chestnuts and sliced green onions. Give everything a good stir and allow the mixture to simmer for an additional minute.
  7. Taste your filling and then add sea salt and freshly cracked black pepper to your liking. Don’t be shy—seasoning is the key here!
  8. Remove the skillet from heat. Now it’s time to arrange the butter lettuce leaves on a platter. Spoon the chicken mixture into each leaf. Top with sesame seeds for an extra touch.
