  • 10 fresh or dried shiitake mushrooms stems discarded and finely diced (about 2/3 cup; if using dried, soak in warm water until softened before chopping)
  • 4 cloves of garlic minced or grated
  • 1 8-ounce can of water chestnuts, drained and finely chopped (approximately 1 cup)
  • 1 tablespoon of ginger freshly grated
  • 1 tablespoon of canola oil
  • 1 green onion finely sliced (for garnish)
  • 1/8 teaspoon of chili oil
  • 1/2 to 1 teaspoon of Chinese hot mustard paste
  • 1 to 3 teaspoons of chili garlic sauce
  • 1 tablespoon of rice vinegar
  • 3 tablespoons of soy sauce
  • 1 green onion thinly sliced

Method
 

  1. In a bowl, whisk together the sesame oil, rice vinegar, oyster sauce, sweet rice wine, and soy sauce. Set aside. This marinade is key—it adds layers of flavor right from the start.
  2. In a large skillet, heat the canola oil over medium heat. Add the ground chicken, cooking until it turns white, about 5 minutes. Break apart the chicken to ensure even cooking.
  3. Once the chicken is cooked, stir in the minced garlic, grated ginger, diced mushrooms, and chopped water chestnuts. Sauté for an additional 3-5 minutes, allowing the flavors to meld together.
  4. Pour your prepared marinade over the chicken mixture. Stir well to coat everything in that delightful sauce. Cook for another 2-3 minutes, until it’s heated through and fragrant.
  5. Take your lettuce leaves and spoon a generous amount of the chicken mixture into the center. Don’t overfill or you’ll have a mess! Top with sliced green onions for an extra burst of freshness.
  6. To create your special sauce, combine the chili oil, hot mustard paste, chili garlic sauce, rice vinegar, soy sauce, and sliced green onions in a small bowl. Adjust the heat to your preference.
