Ingredients

  • 1 lb medium shrimp peeled, deveined, and patted dry
  • 2 tablespoons finely minced carrots
  • 2 tablespoons finely chopped green onions
  • 1 teaspoon freshly minced ginger
  • 2 tablespoons savory oyster sauce
  • ¼ teaspoon toasted sesame oil
  • 1 12-ounce package of wonton wrappers
  • 1 cup low-sodium soy sauce
  • 1 ounce white vinegar
  • ½ teaspoon chili paste adjust to heat preference
  • 1 ounce brown sugar for a deeper sweetness
  • ½ teaspoon freshly minced ginger
  • 1 teaspoon sesame oil
  • 1 cup water
  • 1 tablespoon chopped cilantro leaves

Equipment

  • Steamer basket

Method

  1. In a mixing bowl, combine shrimp, minced carrots, green onions, and ginger. Pour in the oyster sauce and sesame oil. Use your hands to mix thoroughly until everything is well combined, like a harmonious band ready to play.
  2. Take a wonton wrapper and place a teaspoon of filling in the center. Moisten the edges with water. Fold the wrapper in half to create a triangle, pressing out air pockets. Alternatively, you could create pleats for added flair, making each dumpling unique.
  3. Fill a steamer basket with water and bring it to a boil. Arrange the dumplings in the basket, ensuring they are not touching. Cover and steam for about 6-8 minutes, until bubbles rise from the wrappers and they turn opaque.
  4. In a small bowl, combine the soy sauce, vinegar, chili paste, brown sugar, ginger, sesame oil, and water. Whisk until the sugar dissolves. Stir in cilantro just before serving.
  5. Place your freshly steamed dumplings on a plate. Drizzle with the sauce, and get ready to dig in. You might want extra napkins; this could get deliciously messy!

Notes

  • Use Fresh Shrimp: Always opt for fresh seafood for the best flavor.
  • Don’t Overfill: It’s tempting, but overfilling leads to a messy result. Stick to a teaspoon.
  • Steam in Batches: If you have a lot, steam them in portions to avoid overcrowding.
  • Refrigerate Leftovers Promptly: If you have extra dumplings, place them in an airtight container.
  • Try Pan-Frying: For a crispy bottom, you can pan-fry dumplings after steaming for a delightful contrast.
